FOOL’S LAIR (2024)
Barrel-aged Imperial Stout w/ Coffee, Coconut & Cacao
A wheated stout base aged in Willett and Heaven Hill bourbon barrels for 29 months, then conditioned atop raw and toasted coconut and Bolivian cacao. We then added Columbian coffee from Onyx Coffee Roasters to the mix. Milk chocolate sweetness and coconut bliss, eventually shifting to fresh-brewed roast characters and subtle bitterness that is a journeyful retreat back to equilibrium. 14.5% ABV
PAINT THE SHADOWS (2024)
Barrel-aged Imperial Stout w/ Vanilla & Pistachio
Oat and rye stout bases that were aged in Willett bourbon and rye barrels for 25-29 months. We used a heavy hand of Madagascar and Ugandan vanilla, as well as pistachios. The base beers create a foundation of cocoa powder, praline wafers, and those wonderful oaky lactones from top-notch Bourbon barrels. In dessert form this beer feels like chocolate pistachio ganache with a scoop of vanilla gelato on the side. 15.0% ABV
REFLECTION CHAMBER (2025)
The 2025 version is all stout. The blend consists of stouts that were aged in Willett Family Estate bourbon and rye barrels for 21-29 months. This is one of our thickest stouts to date. Big fudge-like notes remind of us cookie dough, dark chocolate, marzipan, and a strong barrel character that brings the resulting beer into balance. 14.5% ABV
